1 1/2 cups flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
3-4 really ripe bananas, mashed
1/4 cup canola oil
finely shredded peel from one lemon
Because I did not add any sugars, I wanted to add a bit more of a sweetness, so I diced up a nectarine and added it as well.
1. Grease a 8x4x2 inch loaf pan.
2. Combine the egg, bananas, nectarine, cooking oil and lemon peel until moistened, set aside.
3. Combine flour, baking powder, baking soda and cinnamon. When mixed well, add to the egg mixture and stir until just moistened. Batter will be lumpy.
4. Spoon batter into prepared loaf pan. Bake at 350 degrees for 50 minutes. Every oven is different, so you may need to bake it for 45 min or even as much as 55 min. When a knife inserted into the middle of the loaf comes out clean, the bread is done. Cool in the pan on a rack for 10 minutes, then remove from pan and let it cool on the rack until cool to the touch. ENJOY.
This was a great after school snack for my son and I will probably add a slice to his lunch box tomorrow.
REMEMBER: There is no added sugar in this recipe so it may take a couple of times trying this for your child to get adapted. But once they do, you will be thrilled!
