In a pinch for what to serve for dinner tonight, I decided on some carrot soup with a little added bell pepper. This soup tastes amazing! I sauted in very little olive oil 1/2 a purple onion chopped up. Boiled the onion with 6 large carrots and about 6 mini sweet peppers. When all the vegetables were soft I threw it all in a blender. I added just enough water for the thick consistency I wanted. I will serve this with a side of Opah fish tonight. YUMMY! Off to school to volunteer and then to an audition with Spencer.
