We are always talking about ways to improve our health and eat more whole foods, So for starters, we are now having “Meatless Mondays” at our house. On the menu tonight is roasted brussel sprouts, brown rice with kale, seasoned with curry and salt = yummy! And lentil burgers.. I wish I had recipes to share with y’all but I just kind of made these up as I was going along. The photo on the lentil burgers doesn’t do them justice. They are delicious and I know my husband and 7 year old are going to gobble them up. My son may want some ketchup on his, but that is okay with me! I’ll be happy to share any recipes for those that wish….have a super Monday everybody! xo
