So, Halloween was a week ago and now it’s time to cut up the pumpkin and decide what to make with all of this fresh pumpkin. I decided on PUMPKIN BUTTER ~ I cut up the pumpkin into large chunks. I placed them in the oven on a cookie sheet for about 40 minutes at 350 degrees, just enough to soften it up. After the pumpkin cooled off I removed the rind and cut the larger chunks into 1″x2″ chunks and was ready to make my pumpkin butter….more to follow tomorrow. I’ll give you a hint…It is delicious! I have already been eating it by the spoonfuls! And Spencer had some atop his pancakes. And the best thing is, it is really healthy!
